Addin a new Network Card to your XEN server can be a bit hairy.  You can do the following from a ssh shell to add a new card:

xe pif-list
xe host-list
xe pif-scan host-uuid={HOST UUID}
ifconfig -a
xe pif-introduce host-{HOST UUID} device=eth4 mac={MAC ADDRESS}
xe pif-list
ifconfig -a

That’s it!

To remove redundant Network Cards is also a bit tricky:

xe bond-list
xe bond-destroy uuid={BOND UUID}
xe pif-list
xe pif-forget uuid={PIF UUID}
xe pif-forget uuid={SECOND PIF UUID - IF you have one...}
